3 - Free-Range Eggs, Beaten
150g - Plain flour
75g - Ground Almonds
1/2 teaspoon - Baking Powder
1/2 teaspoon - Baking Soda
Try a square tin, it's easier to cut the slices.
300 Degrees F/ 150 Degrees C for around 2 hours.

✷ 450g butter
✷ 180g light brown Muscovado sugar
✷ 300g clear honey
✷ 2 oranges, zest only
✷ 4 eggs, beaten
✷ 450g self-raising flour
✷ 1 tsp ground cinnamon
✷ 250g icing sugar, plus extra for
decoration
✷ ½ tsp vanilla extract
✷ 2 tbsp milk
✷ 800g ready-to-roll icing
✷ edible silver balls
✷ edible silver glitter
1 Preheat the oven to 190°C/170°C fan/Gas 5;
grease and flour 2 x 1 litre round-bottomed
pudding basins.
2 In a pan, melt 300g of the butter with the
Muscovado sugar, honey and orange zest
over a low heat, stirring. Leave to cool.
3 Stir in the eggs then fold in the flour and
ground cinnamon and stir gently until
smooth. Divide evenly into the prepared
basins then place on a baking tray and bake
for 50 minutes until the cakes start to
shrink from the sides and a skewer inserted
in the centre comes out clean. Turn out and
cool completely, then slice the tops off the
cakes to level them.
4 To make the butter icing, soften the
remaining butter and put in a bowl.
Gradually beat in the icing sugar. Add the
vanilla extract then the milk to mix to a
spreading consistency.
5 Sandwich the cake halves together, using a little
icing, to form a bauble shape. Cover the outside
smoothly with butter icing and chill for at least
1 hour until the icing is firm.
6 Roll the ready-to-roll icing into a large circle.
Take the cake from the fridge and carefully
place the circle over it, smoothing down and
trimming any excess.
7 Shape a piece of the off-cuts into a small
cylinder and attach it to the top of the cake by
pushing a ring-top metal skewer through it and
into the cake. Thinly roll out more icing and cut
out snowflakes, stars or hearts.
8 To finish, spray with edible silver glitter, stick on
your icing shapes using icing sugar mixed with a
little water and press on edible silver balls.
